It’s the start of a new month, and Walt Disney World fans know that this means Gideon’s Bakehouse at Disney Springs has introduced a new Limited edition flavor of their incredibly delicious cookies and cakes.

July‘s limited-release cookie is the Key Lime Chocolate Chip Cookie which pays tribute to the founder’s favorite Florida-specific dessert – the chocolate-dipped, frozen Key Lime pie on a stick.

This cookie starts with a vanilla bean cookie dough that is infused with Florida Key Lime juice. It’s then covered with chocolate chips and Gideon’s special Key Lime pie crumbs. Finally, a sprinkle of coarse salt over the top of the cookie makes everything taste perfect.

Last week, Deni and I had the chance to try this incredible cookie at Disney Springs. I must admit that I was a bit reluctant at first, but I’m happy that I went into this with an open mind. See, I am the type of person who enjoys a plain old chocolate chip cookie; just the basics, please. When I bake chocolate chip cookies at home, I don’t add anything extra to them; no raisins, no nuts, no fancy extracts – nope. When I learned about Gideon’s July cookie, the Key Lime addition to their original chocolate chip cookie gave me a moment. It didn’t seem like a combination I’d be interested in, even though I am a fan of fruit and chocolate. I love raspberry or orange with chocolate, but Key Lime sounded odd. But I digress.

Much to my surprise, when I broke off a piece of this cookie and popped it into my mouth, that burst of Key Lime was amazing. That delicious burst of citrus combined with melting chocolate chips (it was SOO humid), the sprinkle of salt, and that incredible vanilla bean cookie dough made the most amazing combination. I have to tell you; this cookie was incredibly delicious.

Like every cookie from Gideon’s Bakehouse that I have enjoyed eating, this cookie was thick and moist and full of flavor. The Key Lime juice infused into this cookie makes all the difference in the world because it was there, but it wasn’t over the top. There were also bits of actual Key Lime in the cookie – not pieces making a weird texture, but small bits. It was almost as though they tore the actual fruit and incorporated it into the dough ever so gingerly, so it was almost hidden – like magic!

Eating this cookie was almost like having a slice of chocolate-covered frozen Key Lime pie on a stick, but not on a stick; in cookie form. What an incredible dessert! If a giant slice of cake is more your style, try the limited-edition Key Lime Pie Cake, which is 3 layers of Vanilla Key Lime Cake with a tangy Key Lime Cream Cheese Frosting and house-made graham cracker crust accents.

If you plan on visiting Disney Springs at Walt Disney World in July, I highly recommend adding this limited-edition cookie from Gideon’s Bakehouse to your must-try snack list. Be sure to arrive at the bakery early* as there is only a limited number of these cookies baked daily, and once they are gone for the day, they’re gone until the following day.
