Food Booths Announced for 2025 Mardi Gras: International Flavors of Carnaval at Universal Studios Florida

The 2025 Mardi Gras: International Flavors of Carnaval at Universal Studios Florida is just around the corner. The full list of food booths and a preview of a few menu items has been released.

Food Booths for 2025 Mardi Gras

Booths from 2024 that are not returning this year include Belgium, Bloody Mary Bar, Brazil, French Quarter Bar, New Orleans, New Orleans Desserts, Philippines, Spain, and Thailand. New Booths include Taste of the Quarter, Bites of the Bayou, French Quarter Sips, and India.

Mardi Gras Food Preview

The Universal Orlando Resort’s official website has announced the following menu items.

Grilled salmon with sauce and a side of grain salad featuring chickpeas, cranberries, and spinach, served on a white plate against a pink background with decorative beads.

The Canada booth will serve Hot Maple Lacquered Salmon: freshly grilled salmon topped with a Canadian maple syrup glaze, served with a mixed salad of chickpeas, dried cranberries, tomatoes, baby kale, and a mustard vinaigrette.

The China booth will serve Spicy Szechuan Chicken Bites: crispy chicken topped with Szechuan powder, chili, and sesame seeds, served in a takeout container with white rice.

Returning to the Colombia booth is the Colombia Burger: an all-beef burger with a Colombian twist, topped with Monterey jack, pineapple cabbage slaw, cilantro garlic sauce, and potato sticks.

Of course, it wouldn’t be Mardi Gras without beignets. This classic fried pastry is served hot and topped with plenty of powdered sugar. It will be available at the Bites of the Bayou booth.

Duck a L’Orange Crepe will be available at the France booth: buckwheat crepes filled with shredded duck, onion, and cheese, and topped with orange segments and orange sauce.

The Puerto Rico booth will serve Pinchos de Lechón: pork char-grilled on an open flame, topped with guava barbecue sauce, and served with pan sobao (bread).

Guests can try Cajun Mac & Cheese at the Bites of the Bayou booth: cavatappi pasta with andouille sausage, onions, celery, and green bell peppers, with a Cajun cream sauce.

The new India booth will serve Potato Dosa (Vegan): crispy, savory crepes filled with potatoes, onions, and black mustard seeds, and accompanied by a cilantro dipping sauce.

New to the Germany booth is Leberkäse: traditional Bavarian beef and pork meatloaf griddled right to order and served on a pretzel bun with sauerkraut and sweet mustard.

Universal Mardi Gras runs from February 1 through March 30.
